ingredients:
4 eggs (2 for yolk only)
2 tbsp olive oil
2 tbsp french mustard
1 large potato
1 plum tomato
freshly chopped chives
3 tbsp MAHI Cayenne & Cranberry Sweet Heat Sauce (or MAHI Green Savina Habanero Sweet Heat Sauce)

Method:
- Prepare your hollandaise sauce with 2 egg yolks, mustard and olive oil into a small bowl
- Whisk together with a little hot water (careful not to scramble your eggs!)
- Parboil your potato,then grate finely and add salt and pepper to taste
- Mould into small cylinders and fry in oil on a medium heat on both sides till golden brown
- When ready, place your hash brown onto a plate to cool
- Poach your eggs and grill two halves of a tomato
- Add tomato and poached egg onto hash brown and drizzle your hollandaise over the top
- Finish with a healthy dollop of mahi sauce, serve and enjoy!
