MAHI | King Prawn & Spaghetti

This recipe is going to channel the taste of Italy with the added twist of spice coming from Mahi Bhut Jolokia sauce, with all the wonderful mediterranean flavours this dish truly is a tastebud sensation but simple to and quick to create at home! Prep time- 5 minutes Cooking time- 15 minutes Serves- 2


-Mahi Bhut Jolokia Sauce
-A table spoon of olive oil
-An onion
-A clove of garlic
-150g of cooked king prawns
-60g of chopped chorizo
-A handful of baby spinach
-A tin of chopped tomatoes
-150g wholewheat spaghetti
-Fresh basil to serve


First you want to put your spaghetti into some boiling water, the spaghetti and your sauce should finish cooking at the same time so you serve together. Then heat a tablespoon of olive oil in a pan over a medium heat and add in your 150g of cooked king prawns, followed by the 60g of chopped chorizo, fry together for a couple of minutes then add in the clove of chopped garlic, closely followed by the tin of chopped tomatoes and mix all together, as the dish simmers away add in a helping of passata to create the desired consistency and the Mahi Bhut Jolokia sauce. I would recommend tasting as you go with this as its very spicy! Wilt in your baby spinach and leave to simmer for around 10 minutes whilst the sauce reduces and until your pasta is finished cooking!

Drain off your pasta and serve with some fresh basil (some lovely ciabatta accompanies this dish really well too!)
