With their melt-in-the-mouth, sugar flesh, and delicious taste, sweet potatoes are a healthy way to satisfy your carb-cravings. They are a moderate source of calories and are packed with fibre and other nutrients that not only help you stay healthy, but also boost weight loss. This quick and easy recipe sees sweet potatoes stuffed with beands, chilli, vegan cheese, grated onions, drizzled with maple syrup and peri peri hot sauce. The dish serves up two portions in approx 60 mins.

1. Firstly wash and half both sweet potatoes, cover in oil and place in a pre heated oven and leave to cook on a high heat for approx 25/30 mins
2. Whilst the potatoes cook add the diced white onion to a large pan and cook for 2 mins until translucent. Then add the garlic for another minute or so.
3. Add in the tomatoes, mixed beans and tomato puree and leave on a medium heat for around 15 mins.
4. Once the chilli has begun to heat add in the chilli powder, smoked paprika, diced chilli and the mahi hot sauce for a nice spicy kick. Then leave to cook for another 10mins
5. Once the chilli is done turn the heat down to a low simmer and close the lid (add a little water if it has become too thick)
6. Take out the sweet potatoes once the skins are nice and crispy and with a large spoon scoop out the potato inside and add it into the chilli
7. Once the chilli and potato and chilli is mixed well the load each potato skin with the new mix
8. Sprinkle vegan cheese over the sweet potatoes and then place them back in the oven for around 4 mins until the cheese has melted.
9. Serve with a side of salad and enjoy
