    Seitan/Burger Patty
    2x Cups Vital Wheat Gluten
    1/2x Cup Nutritional Yeast
    2x tsp Paprika
    2x tsp Garlic Powder
    3x tsp Onion Powder
    1x tbsp Parsley
    1 1/2x Cups vegetable broth
    2 tbsp Soy Sauce
    Broth:
    4x cups Veg Broth
    2x cups Water
    Batter Mix/Dry:
    2x cups Flour
    1x tbsp Paprika
    1x tbsp Garlic Powder
    1x tbsp Onion Powder
    x tsp Salt
    x tsp Pepper
    Vegan Egg Mix:
    1x cup Gram Flour
    2x cups Water
    Garnish :
    1x Red Chilli
    Sprig of Coriander
    x tbsp Vegan Mayo

Method:
  1. Slice the cabbage and red onion into thin strips and add to a bowl, next add the carrot, Cajun spice and mayo and mix. Set aside.
  2. Seitan chicken: In a mixing bowl, whisk the vital wheat gluten, nutritional yeast, and spices. Add the veggie broth and soy sauce and mix until combined. Knead for 5-7 minutes.
  3. Bring the broth ingredients to a boil in a large, tall saucepan. Break off palm sized pieces of the seitan and place them in the broth (if you need to, add more water to cover them). These will double in size. Bring the mixture to a simmer and cook for ~30 mins, flipping each piece halfway through.
  4. Whisk together the flour mixture ingredients in one bowl and the egg mixture in a separate bowl. 5. Fill a large saucepan about 1 inch high with canola oil and heat on medium-high to ~350°F. For each piece of seitan, cover in the flour mixture, then the egg mixture, then the flour mixture again and place in the hot oil. Cook on each side until crispy (~3 minutes per side)
  5. Slice your bun in half and toast gently on the grill, next add a small dollop of mayo and Mahi chilli sauce to tach side of the bun, add the slaw, the vegan chicken burger and your sliced chillis and coriander.
